Created by brothers Curtis and Luke Stone, Gwen prides itself on using only the finest of meats from the European-style butcher shop before being cooked to perfection using fire-based techniques. Guests are offered a flexible menu featuring a la carte options and a five-course menu. The interior's industrial elegance surrounds guests with dry-aging rooms encased in glass, drying charcuterie, and a roaring fire pit filled with roasting meats as the focal point. There's no question that the food takes center stage here. Named after their grandmother, who lived on a farm outside of Melbourne Australia, this dining concept has been a decade-long dream of the two that is now a reality. Their time on the farm and working in a butcher shop at the start of their careers instilled in them a deep respect for the process of raising livestock for food.
