Every evening after Wynn’s breakfast and brunch restaurant, Tableau, closes for the day, a two-hour transformation begins to change the space into one of the most storied ranches in America, the 6666 Ranch in Guthrie, Texas. Black-and-white photos of cowboys are scattered throughout the room, authentic saddles and Texas-themed decor further immerse guests like film-production magic, and almost all existing furniture and table settings are customized to complete the aesthetic. The menu is built around prime steaks and cuts sourced from the legendary ranch, all cooked with Texas-authentic preparations and spices, and includes other unique culinary crafts from the minds of Executive Chef David Middleton, Christopher Lee, (Wynn’s vp culinary operations and restaurant development), and Boss Taylor Sheridan, (the ranch owner known for "Yellowstone," "1883," and "1923"), respectfully.
Highlights include a “Texas Twinkie” which is a gutted Hatch chile stuffed with cheese and brisket then wrapped in bacon and slathered with BBQ and honey, “Cowboy Caviar” a vegan dish that features black-eyed peas, avocado, tomato, and charred scallion vinaigrette, and, of course, cuts ranging from a 9-ounce filet mignon to a 40-ounce porterhouse and end with the star of the show, a $999.90 (6666 upside down) 48-ounce Japanese Purebred Freedom Wagyu Tomahawk from Grazing Star Ranch. Whether you are a fan of Sheridan’s work and television shows or looking for a five star steakhouse that checks everything off the list, this pop-up restaurant will certainly deliver.

The chimichurri condiment has Serrano peppers and a kick, maintaining the tradition of Texas cuisine with big, bold flavors. Apparently, according to Middleton, there's another secret ingredient in there, but he refuses to reveal it, telling guests to “Ask Taylor" instead. The pop-up is set to continue until early 2025, so this may be a limited-time event, but they are optimistic about a permanent spot with the Wynn.
